Luca, on average two approaches to the pedalboard are used. There is the organist who plays barefoot (for which there is great contact and absence of a heel) and there is the one who plays with dance shoes completely resoled in leather, with a raised heel (let's say max 3/4 cm).

Even if 7-8 cm seem uncomfortable, I note that Madonna in her videos dances (and not at twenty years old) in extremely high stilettos that anyone would advise against
