I have a big problem because I cannot get the two keyboards to play two different sounds, since there is only one input channel receiving all MIDI signals; in fact, if I try to control the plug-ins via the Novation, they change for both keyboards. Reading here and there, I see that everyone is talking about setting up the Environment.

It depends on which VST you use. Usually, there is a MIDI mapper where you select the MIDI channel (Omni, channel 1, channel 2, channel 3... etc. etc.), then how many MIDI inputs does your audio interface have? I don't know your level of expertise, but there are people who have called me to connect a synth and a keyboard into the MIDI inputs because they saw two, without considering that one was the IN and the other was the OUT... Ahhh, why do you need it for Live? Then stop, for live it is not possible to do what you are saying unless you have an audio interface that has two inputs and set the channel strips to two different MIDI channels within the same VST player. In EXS24 this is not really possible. In Kontakt, yes. You can load two libraries into the same player and assign two different MIDI channels to the two libraries, but I don't know if it's possible using the same two USB interfaces; it would be more practical to use a single interface with 2 MIDI Inputs and 2 Outputs. Logic is not designed for live performance but for studio recording. If you have a need for live, you must learn MainStage, but you will need to research it; I took a brief look at it but I wouldn't know how to be of help...
