Hello maestro... I would like to have a list of the correct sequence of interventions to perform on the regulation of grand piano action.... Then, I would also kindly like to know how to find the correct distances for a Steinway & Sons piano from 1910... thank you

The regulation must be carried out after verifying all the mechanics and their wear. For example, which I believe has also been mentioned in tutorials: if the roller is flattened or the center pins are too tight or too loose, if the heels of the jacks are heavily grooved by the drivers, etc., all of this affects and distorts the regulation.
In your case, set hammer-string 47mm
escapement 2 - 1.5 mm
drop 1-1.5 mm
check approximately 15mm (the hammer rest must be tilted correctly to receive the hammer tails without bouncing)
white key dip 9.5- 9.8mm

... But for the other pianos of potential customers... where do I find the correct measurements from time to time?

Unless you have the specifications for that piano, you must study the geometry of the mechanics and find the right ratio between the measurements. Watch my video on custom measurements
