Ida Haendel (1928) was a very famous violinist in her time. It's incredible how she is still so in tune and sharp. Generally, at a certain age, the sound begins to decline and go out of tune. In this 2011 recording she is 83 years old!! Pianists obviously don't have this problem.

From what I know, the eardrum is a membrane that tends to stiffen over time, so a change in sensitivity is physiological; I didn't think it also had impacts on intonation... let's say more on the "volume" of the person who has to communicate or say something.
