In effect....
Music begins with the emission of sound and sound propagates according to precise proportional and mathematical relationships... see the harmonics of the piano.
So...I would say that mathematics is involved. Also consider that mathematics as we generally see it does not have much potential, whereas mathematics at high levels becomes a great means of investigating the unexplored, if not even an abstract form.
Even in drawing, in the proportions of things that exist in nature (see the relationship of the whole with the smaller parts... the famous "golden ratio" of the ancients) it is everywhere, in short.....it is always there marking the entire world in all dimensions.

Mathematics is used to understand the physical phenomena of sounds; music is something else because it implies, as an emotional human language (which also responds to another topic), the necessary presence of human consciousness.

Yes of course, music understood as composition, nothing else.
But these are still harmonic conventions that come to life thanks to the origin of music itself.

I think Odifreddi's words should be taken with little critical sense regarding the context (a mathematics in music lesson aimed at high school freshmen).
In my opinion, he gave a beautiful presentation, summarizing—albeit in a very narrow way—the mathematics that lies at the base of music. Not by chance did he gloss over, barely mentioning, the entire part of Fourier harmonic analysis, which is a very intense and difficult subject, clearly not suitable for those who possess only the first rudiments of infinitesimal calculus. However, the overview seems very interesting to me; who knows if this introductory framework hasn't made an impression on someone.
