Good morning, does anyone know if there is a book that talks about piano mechanics and how they have evolved over time?

Rattalino's books, apart from a few details, are very exhaustive and also well written.

I would start with "Storia del Pianoforte" (History of the Piano), where in addition to the technical evolution of the instrument, the great composers are also discussed; then, also by Rattalino: "Pianisti e fortisti", "Da Clementi a Pollini" and "La sonata romantica".
