If I understood the question correctly, you are interested in removing the stems from the notes. Therefore:

Click the key-shaped icon, select with the mouse the notes that you want without stems, right-click on the selection, 15. Notes without stems.

For the text, use the mf icon (Expression tool), double-click the mouse on the point where you want the text, go to expressive text, create expressive text, write the text and decide its formatting, ok, assign. At this point you will see it in the score... to reposition, drag the object with the mouse.

To hide rests, just use the 'h' key on your keyboard; you can also use rests to space out the notes.

To hide time signatures, always use the treble clef icon, double-click the mouse on the staff and then uncheck the time signature flag (here you can also choose to hide rests and whatever else comes to mind).

To move notes without using rests, you can select the Tools menu, advanced tools, special tools, note position. White squares will appear on the notes of the active layer (drag them with the mouse).
