Good evening, I am kindly asking if anyone could recommend interesting texts that deal with the transcription of orchestral compositions for piano with intelligence and not just as a mere transposition of notes, perhaps also referring to styles etc..

The best manuals are scores; treatises, indicatively, refer to instrumentation. It is true that many manuals discuss orchestration, but I do not think they can go beyond description.
Anyway, this phrase is not quite clear to me

You want to start from the orchestra and move towards the piano. I think this is an operation that may be valid only up to pieces from a certain period (for example, timbrally, the piano is very different from other instruments and vice versa). For me, recreating sound situations with other instruments falls within the realm of creativity and not theory (and therefore not treatises).
