For composition from 1900 onwards, there is an embarrassment of riches. Don't forget the 21st century; there is an ad hoc section in the forum and you can discover gems like this:

For the performance of a composition from the Romantic period, I would choose a composer from the "strictly" Romantic period. Chopin, why not? But also Schumann, Mendelssohn (one could dare Liszt... like Schubert)
