From how you have posed the question, I think you are just starting out, since you are approaching a notation system and still have to learn it; perhaps it would be better for you to change direction in the sense that Sibelius is quite advanced.

That being said, surely a look at the help certainly won't hurt. In reality, Sibelius is quite intuitive regarding basic functions, so setting up a project and writing the first notes shouldn't be a big problem. Perhaps you could point out your main questions to us so that we can help you start a first project and then, as difficulties arise, give you some tips.
I think I've seen some tutorials; I'll point something out to you later.

Thank you very much, I am asking for information on Sibelius compared to Finale because I have had experience with this specific program in the past and, knowing it on a basic level, I would like to start using it again after having read and seen relevant guides regarding it

apparently this possibility to customize the staff size is only available from version 8.5..
